Don’t go out for waffles – make them!
Ingredients:
• 2 waffles (34g)
• 2 tbsp. (80g) cottage cheese
• 2 tbsp. (50g) pure maple syrup
• 2 kiwifruit (156g), peeled and sliced
Toast the waffles before setting on a plate.
Next dollop a spoonful of cottage cheese onto each.
Drizzle with pure maple syrup and kiwi slices.
For a pretty presentation, cut flower-like shapes from the kiwi slices, you can also do this with rockmelon (cantaloupe) or watermelon (so pretty!).
Homemade Vegan Waffles
Ingredients:
• 1 cup rolled oats
• 1 cup almond milk
• 1 tbsp. coconut oil
• 1 tsp. vanilla extract
To make your own waffles, simply pulse
1 cup rolled oats in a food processor or blender until nice and fine; pour into a large bowl.
Add 1 cup almond milk,
1 tbsp. coconut oil and 1 tsp. vanilla extract and mix to combine. Set aside whilst heating waffle iron.
Cook the waffles according to instructions.
